What do you think about Fish Rolls? As a kid, I ate lots of it and had a tummy ache one day due to excess indulgence😂
Anyway, Fish Roll is one snack that most Nigerians love to eat. It is mostly sold on street.
However, buyers tend to be skeptical about it because of it's hardness.
Fish Roll is meant to be soft on the inside crispy on the outside making you want more.
Fish Roll is easy to make and like the name implies, it is filled with fish.
Let's get our hands deep in flour.Hold up!!! Wash your hands first😁
Ingredients:
2cups of flour
¼ cup of sugar
⅓ cup of powdered milk
100g sugar or (½ of sachet butter)
I egg
1 tablespoon baking powder(leveled)
Pinch of salt
Fish
Onions
Ginger and Garlic(Optional)
Curry and Thyme
Cayenne Pepper(black pepper)
Water
Directions:
For the Fillings:
-Get Titus fish or Shawa fish. I prefer Titus though. Frozen Titus is sold for #400-#500. You can also use Sardine in place of Frozen Titus (#300).
- clean the fish.
- spice the Titus fish with curry, thyme, ginger and garlic, salt and Maggi to taste and boil (you can skip this part if you making use of sardine)
- allow to cool.
While cooling, you can make the dough.
Dough Directions:
- Pour all dry ingredients in a bowl( flour, baking powder, sugar, salt). Mix all together.
- rub in butter, you should have rough looking flour, rub till you don't feel the butter in the flour.
- create a well in the flour and break in the egg.
- rub it in the flour
- add water to combine the flour ( you can use liquid milk in place of flour; powdered milk won't be necessary if you want to use liquid milk)
- add little by little, you don't want to ruin it by adding too much water at once.
In case such happens, add more flour and knead.
- after kneading, ensure it doesn't stick to the bowl. Let it rest for 20 mins.
- mash the fish with your hands or fork, spice it with cayenne pepper and onions.
Don't mind the look. It tastes better than it looks.
- roll out your dough on a flour surface.
- cut out uneven edge with knife or cutter.
- lay fish on the edge
- roll inwards three times.
- mix flour and water to form a paste to seal the tip.
- cut to desire sizes.
Frying Time:
- Heat groundnut oil
- throw in a pinch of pastry to test degree of hotness.
- once the pastry comes back up with bubbles immediately, you can start frying.
- fry till golden brown, once cooled it deepens.
Serve with any chilled drink of your choice

PS: if you have excess pastry that can't be rolled, you can cut into pieces for chinchin.
With #2000 or less, you can make your fish roll (depends on available ingredients you have at home).

N.B: If you don't have measuring cups, you can get a cup of flour in stores for #250; it equals two of the measuring cups.
