How to prepare Coconut Fried Rice

Ramadan Kareem to my Muslim viewers. May Allah accept it as Ibadah. 
And to my non Muslim viewers, it's nice to have you here on the page again.
 I hope y'all enjoyed and practiced the last recipe. This week recipe promises to blow your hunger away, an awesome way to break the fast also.
We'll be making Coconut Fried Rice...Yum! It's fried rice albeit prepared with coconut.. If you like coconut, you'll love this. You can surprise the family or Bae with one or even indulge in it yourself😋


Let the seasoning begin👇
 Ingredients:
- Rice
- Carrot
- Sweet corn
-  Peas
- GreenPepper
- Coconut Milk
- Onions
- Curry & Thyme
- Spring onions
- Maggi & Salt
- Vegetable oil/Melted butter


 Directions:
First step:
- Heat vegetable oil, add carrot, sweet corn and other vegetables you choose to add. Fry together. Set aside.

Second step: 

- Heat vegetable oil or butter in a pot that can cook your rice evenly.
- add sliced onions, green pepper and spring onions. Let it fry a bit.

- add washed rice and peas and stirfry also. The peas were added early because they are fresh and doesn't cook easily. If you using the tinned one, add once the rice is ready not before and stir together.

- add curry and thyme and fry as well. This will change the color of the rice.

Tip: the more the curry, the more greenish your rice gets. Use spatula or what Yoruba call *omorogun* to stir the rice.
- allow to fry for few minutes, ensure the heat is not high in order to prevent burning.
- after frying the rice  for 5mins max, add coconut milk.

- add stock water(chicken or meat)
- add Maggi and salt to taste.
- cover the pot and allow to cook. If the rice is strong, you can add more coconut milk or water. Add with caution so as to avoid soggy rice.
- check the softness. Once the rice is soft, add the vegetables, liver and whatever you like to add to your fried rice.

- Stir together, cover to steam for 3mins.

And voilà, your coconut fried rice is ready. Serve with chicken, fish or beef with a chilled drink. Yum! Bon apetitè

Making this tasty rice requires patience. Ensure the heat is not too high and not too low to avoid burning and or sogginess.

  2. Other than corn in beans(Cele style), I don't think I like coconut in my food. I'll rather eat it alone or eat alongside drinking my garri.
    But why won't I give this your recipe a chance.
