Concoction Rice, Palm oil Rice, Village Rice, simple steps

Welcome to the month of June. It's the rainy season proper. Wheeew!! Windy days ahead.
What better way to enjoy the rainy season than with this sumptuous, colorful Palm oil Rice.
You can also call it Village Rice or as I love to call it Concoction Rice with a Palm oil flare!!! Hooolala!!
Easy to prepare.
Ladies and Gentlemen, shall we?
Ingredients:
Rice
Meat/chicken(cooked)
Smoked fish
Pomo
Grinded Crayfish
Prawns
Fresh Pepper
Seasoning
Salt
Curry leaves
Palm oil
Directions:
- add the blended pepper, salt and seasoning.
- add water (preferably hot water), let it boil a bit.
Taste your cooking and add salt or seasoning if necessary. Don't forget to add water if the rice is still hard. Do not over stir to avoid burning.
- let it steam for 2 to 3 mins. Your rice is ready.
Tips: to get the best of the pomo, steam with hot water before you add to your cooking. You can add seasoning and onions. It helps improve its bland taste.
Wash the smoked fish thoroughly, to rid it of sands.
I added prawns and cooked chicken in the last step/picture because I bought a fried prawn and I don't like an overly soft chicken or meat. You can get curry leaves in market or stores close to you for as low as #50.
You can have this colorful and sumptuous rice for breakfast, lunch or dinner. Trust me, you gonna love it.
A little change from groundnut oil; Palm oil helps the body metabolism and prevents Vitamin A deficiency.
